Choosing the right cucumber
English (hothouse) cucumbers are ideal — they have thin skin, fewer seeds, and a mild, sweet flavour. Persian cucumbers also work beautifully. Avoid waxy supermarket cucumbers if possible; they have a slightly bitter skin that comes through in the drink.
